1 package (10 oz.) thawed frozen strawberries,drained
1-1/3 cups sifted flour
1/2 tsp. baking powder
1/4 tsp. soda
1/4 tsp. salt
1/2 cup vegetable shortening
2/3 cup sugar
1 egg yolk
1/2 tsp. vanilla
1 tsp. lemon juice
Sift together the flour, baking powder, baking soda and salt. Blend together the shortening and sugar; creaming well. Add the egg yolk, vanilla and lemon juice; beat well.
Measure 1/2 cup drained strawberries. Add alternately with the dry ingredients to the creamed mixture, ending with strawberries. Drop by half teaspoonsful onto well greased baking sheet. Bake at 375* for 8-10 minutes.
Place on a wire rack over waxed paper or foil. Brush with the Strawberry Glaze while still warm.
Strawberry Glaze:
2 tbl. strawberry juice
1/4 cup sugar
1 tsp. lemon juice
Stir until the sugar is dissolved.
