Peanut Brittle Cookies

1 cup flour, sifted
1/4 tsp. soda
1/2 tsp. cinnamon
1/2 cup butter
1/2 cup firmly packed brown sugar
2 tbl. beaten egg, (reserve the rest)
1 tsp. vanilla
1 cup salted peanuts, finely chopped and divided
Sift together the flour, soda and cinnamon. Cream the butter and brown sugar thoroughly. Blend in the 2 tbl. beaten egg and the vanilla. Beat well. Add 1/2 cup salted peanuts, and the dry ingredients. Mix thoroughly. Spread or pat the dough on an ungreased baking sheet to a 14 by 10 inch rectangle. Brush with the remaining 1 tbl. egg.
Sprinkle with 1/2 cup peanuts. Bake at 325* for 20-25 minutes. Do not overbake. Cut or break into pieces while still warm.
