Lemon Mardi Gras Bars

1-1/2 cups sifted flour
1/2 tsp. salt
1/4 tsp. baking powder
3 eggs separated
1 cup sifted powdered sugar
1/2 cup butter
1 cup sugar
1/3 cup lemon juice
2 tbl. grated lemon rind
3/4 cup pecans, chopped
Sift together the flour, salt and baking powder. Beat 3 egg whites until soft mounds form. Add the powdered sugar gradually, beating well after each addition. Continue beating until stiff, straight peaks are formed when the beaters are raised.
Cream the butter. Gradually add the sugar; creaming well. Add 3 egg yolks, one at a time. Beat for 1 minute. Measure lemon juice. Add alternately with the dry ingredients to creamed mixture, beginning and ending with dry ingredients. Blend thoroughly after each addition. (With an electric mixer, use low speed.)
Add the lemon rind and 1/2 cup of the pecans. Mix well.
Fold in the beaten egg whites gently but thoroughly. Pour into well greased and lightly floured 13 by 9 inch pan.
Bake at 400* for 25-30 minutes. Frost while still warm and sprinkle with the remaining 1/4 cup pecans.
Butter Frosting:
2 tbl. butter
1 cup powdered sugar
1 tbl. cream
Beat until creamy.
