Lemon Butter Cookies

1-2/3 cups flour
1/3 cup powdered sugar
1 cup butter, softened
1 tsp. vanilla
Filling:
1 egg, beaten
2/3 cup sugar
2-3 tsp.grated lemon peel
1 tsp. cornstarch
1/4 tsp. salt
3 tbl. lemon juice
1 tbl. butter
Powdered sugar
In a medium bowl, combine first 4 ingredients; blend well. Chill dough. Preheat oven to 350*. Shape dough into 1 inch balls. Place 2 inches apart on an ungreased cookie sheet. With thumb and forefinger, make an imprint in the center of each cookie.
Bake for 8-10 minutes or until lightly browned. Immediately remove from cookie sheet; cool.
Filling:
In a medium saucepan, combine filling ingredients except powdered sugar. Cook over low heat, stirring constantly until smooth and thickened. Cool.
Top each cookie with about 1/4 tsp. filling. Sprinkle with powdered sugar.
