3 cups all-purpose flour
1/2 tsp. salt
1-1/2 tsp. baking powder
3 tbl. orange powdered breakfast drink mix
3/4 cup shortening
1-1/2 cups light brown sugar
2 eggs
1 tsp.vanilla extract
1 tsp. baking soda
1/2 cup buttermilk
1 cup white chocolate chips
Orange Glaze:
1 tsp. butter, melted
3 tbl. orange powdered breakfast drink mix
1 cup powdered sugar
1 to 2 tbl. water
Preheat oven to 375*. Lightly grease baking sheets.
In a medium bowl, combine flour, salt, baking powder and 3 tablespoons drink mix; set aside.
Cream the shortening and the sugar together until light and fluffy. Add the eggs and vanilla, mixing well. Dissolve the baking soda in the buttermilk and add to creamed mixture, mixing well. Stir in flour mixture until just mixed; add white chocolate chips.
Drop dough by tablespoonfuls onto prepared baking sheets. Bake for 10 to 12 minutes. Transfer to wire racks and frost cookies while still hot with Orange Glaze.
glaze:
combine the butter, 3 tablespoons drink mix, powdered sugar plus enough water to obtain desired spreading consistency.
Makes 4 dozen.
