2 cups sifted flour
1/2 tsp. baking powder
1/4 tsp. salt
1/2 cup sugar
3/4 cup butter
1 egg yolk
1 egg
2 tsp. grated orange rind
2 tbl. orange juice
Sift together the flour, baking powder, salt and sugar. Cut in the butter until particles are very fine. Blend together the egg yolk, 1 egg, orange rind and the orange juice. Sprinkle the egg mixture over the flour mixture, a little at a time, while tossing and stirring lightly with a fork until the mixture forms a dough. Cover and chill for easier handling.
Shape into balls, using a rounded teaspoon for each. Place on an ungreased cookie sheet. Flatten to slightly less than 1/2 inch thick with a fork dipped in flour. Press a raisin into the center of each.
Bake at 375* for 12-15 minutes until very lightly browned. Cool. Dip or spread Apricot Glaze on the tops of cookies, then dip into 1-1/2 to 2 cups coconut. Let stand 1 hour before storing.
Apricot Glaze:
1/2 cup sugar
1/3 cup apricot preserves
1 tbl. orange juice
3 tbl. water
Blend in a saucepan and boil for 3 minutes. Cool.
