Chocolate Covered Cherry Cookies

A buttery maraschino cherry with a chocolate coating.

1 cup butter
3/4 cup powdered sugar
1/2 tsp. salt
1 tsp. vanilla
1 tsp. almond extract
2-1/4 cups sifted flour
1/4 cup nuts, finely chopped
1/2 cup well drained maraschino cherries, chopped

Gradually add the powdered sugar to the butter; cream well.
Add the salt, vanilla and almond extract.; beat well. Blend in the flour, nuts and cherries.
Shape into balls, using a rounded teaspoon for each. Place on an ungreased cookie sheet.
Bake at 350* for 15-18 minutes. Cool thoroughly. Dip in chocolate dip; covering the tops and sides. Top each with a small piece of maraschino cherry. Let stand on a rack until chocolate is set before storing.

Chocolate Dip:
1 cup semi-sweet chocolate pieces
3 tbl. butter
1/2 cup milk
3 cups powdered sugar

Melt the chocolate pieces, milk and butter in the top of a double boiler over hot water. Cool slightly. Blend in 3 cups sifted powdered sugar, beating until smooth.
