Chinese Almond Cookies

2-3/4 sifted flour
1 cup sugar
1/2 tsp. soda
1/2 tsp. salt
1 cup butter
1 egg, slightly beaten
1 tsp. almond extract
1/3 cup blanched almonds, halved
Sift flour, sugar, soda and salt together into a bowl. Cut in the butter till mixture resembles corn meal. Add egg and almond extract; mix well. Form into a ball.
Roll to slightly less than 1/4 inch thickness; cut with 2 inch round cutter. Place on ungreased cookie sheet about 2 inches apart.
Place almond half atop each cookie.
Bake at 325* for 15-20 minutes.
