1 (18.25 ounce) package white or orange cake mix
1 (6 ounce) package orange flavored gelatin mix
4 eggs
3/4 cup vegetable oil
3/4 cup water
1 tsp, vanilla
1 tsp. orange extract
Preheat oven to 350 degrees. Grease and flour a 10 inch tube, or a 9 by 13 inch pan.
In a medium bowl, stir together the gelatin mix and cake mix. Add the eggs, oil, water vanilla and orange extracts. Mix on high speed of an electric mixer for 3 minutes. Pour the batter into the prepared pan.
Bake for 35 to 40 minutes in the preheated oven, until cake springs back when lightly touched. Be careful not to overbake.
May frost with (Orange Coconut Topping)
Cream together 1/4 cup butter and 1/2 cup brown sugar. Blend in 3 tbl. orange juice and 3/4 cup coconut.
May broil the frosting 2-3 minutes after spreading on the cake.
