Bacon and Egg Breakfast Bars

1 pound bacon
1/3 cup brown sugar, packed
1/3 cup butter
3/4 cup flour
1/2 tsp. salt
3/4 cup quick cooking oatmeal
1-3 oz. package cream cheese
1/4 cup milk
8 eggs
Preheat oven to 350*
Cut the bacon into 1/2 inch pieces and cook until crisp. Drain on paper. Pour all but one tablesopon of bacon grease from the skillet. Cream butter and brown sugar. Mix in flour, salt and oats. Press 1/2 of the mixture into a buttered 8 by 8 inch baking dish. Whip cream cheese with milk. Add eggs and blend with an electric mixer. Pour eggs and cheese mixture into skillet with one tablespoon bacon grease and cook slowly over low heat, stirring it until it has the consistency of pudding. Add bacon to the mixture in the skillet. Spoon the mixture over the bottom crust. Top with the remaining crumb mixture. Cook 20-25 minutes in the oven. Cool slightly and cut into bars. You may store overnight in the refrigerator and reheat for breakfast for 15-18 minutes at 400*.
Note:
When cooking the eggs and cream cheese in the skillet, avoid overcooking as the eggs must cook another 20-25 minutes in the oven.
