Pumpkin Walnut Fudge

4 cups sugar
1 cup milk
3 tbl light corn syrup
1 cup fresd pumpkin puree or canned pumpkin puree
3 tbl unsalted butter, cut into bits
1 tsp. vanilla
2 cups chopped walnuts
in a four quart heavy saucepan combine the sugar, milk, corn syrup, pumpkin puree and a pinch of salt. Cook the mixture over moderate heat, stirring until the sugar is dissolved. Cook it undisturbed until a candy thermometer registers 238*
Remove the pan from the heat, add the butter(do not stir it into the mixture). Let the mixture cool until it reaches 140*. Stir in the vanilla and the walnuts. Beat the mixture with a wooden spoon for 30 secondss to one minute or until it begins to lose its gloss. Pour it immediately into a buttered 9 inch square pan.
Let the fudge cool until it begins to harden; cut it into squares and let it cool completely.
