Zucchini Pineapple Bread

3 eggs, beaten until light and foamy
2 cups sugar
1 cup oil or 1/2 cup oil and 1/2 cup applesauce
3 tsp. vanilla
1(8 oz.) can crushed pineapple, well drained
2 cups grated zucchini
3 cups flour
1 tsp. baking soda
1 tsp. baking powder
1 tsp. cinnamon
1 tsp. allspice
1/2 tsp. cloves
1 cup chopped nuts or raisins(optional)
Mix the first 6 ingredients lightly, but well into the egg mixture. Combine the flour, baking soda, baking powder, cinnamon, allspice and cloves. Sift the flour mixture into the zucchini mixture, stirring until well blended. Add nuts and/or raisins, if desired. Pour into 4 greased and floured loaf pans.
Bake at 350* for 35 minutes.
