1- 8 1/4 oz. can crushed pineapple
milk
1-1/2 cups Bisquick
3 tbl. sugar
1 beaten egg
1 tbl. sugar
1 tbl. finely shredded orange peel
Drain pineapple, reserving the syrup. Add enough milk to the pineapple syrup to measure 3/4 cup liquid. Combine Bisquick and the 3 tbl. sugar. Combine egg, the reserved pineapple liquid and 1/4 cup drained pineapple. Add all at once to the dry ingredients. Stir just until moistened. Grease muffin cups. Fill 2/3 full.
Stir together the remaining drained pineapple, 1 tbl. sugar and orange peel.
Spoon about 1 tbl.of this pineapple mixture atop the batter in each muffin cup.
Bake at 400 degrees for 20-25 minutes.
