Streusel Pudding Coffee cake

2 cups Bisquick
1/4 cup sugar
1 egg
1/4 cup vegetable oil
2/3 cup milk or cold water
1 package (3-3/4 oz. instant pudding and pie filling (any flavor)
Streusel topping
Preheat oven to 400*. Grease a square pan 9 by 9 by 2 inches.
Mix all the ingredients except streusel topping; beat vigorously 30 seconds. Spread in the pan. Sprinkle with the topping. Bake until a wooden pick inserted in the center comes out clean, 20-25 minutes.
