Oatmeal Raisin Muffins

1 cup rolled oats
1 cup buttermilk
1 cup all purpose flour
1-1/2 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. baking soda
1/4 tsp. salt
1/2 cup butter or margarine, melted
1/2 cup firmly packed brown sugar
1 egg, beaten
1/2 tsp. grated orange peel
1 cup Raisins
Heat oven to 350 degrees F. Grease or line 12 (2 3/4-inch) muffin cups with paper baking cups.
Combine oats and buttermilk; let stand. Combine flour, baking powder, cinnamon, baking soda and salt; mix well. Combine butter, brown sugar, egg and orange peel. Stir into oat mixture; mix well. Add to flour mixture; stir just until dry ingredients are moistened. Fold in raisins. Spoon batter into prepared muffin cups. Bake at 350 degrees for 25 to 30 minutes or until toothpick inserted in center comes out clean. Makes 12 muffins.
