Lemon Cream Cheese Muffins

1 egg
1/2 cup plus one tsp. oil
1/2 cup milk
2/3 cup sugar
4 ounces cream cheese, softened
1-1/2 cups flour
1-1/2 tsp.baking powder
1/2 tsp.salt
1 lemon
Mix egg, oil, milk and sugar together. Cut cream cheese into small pieces, mix with 2 tbl.flour. Grate 1 lemon rind into batter. Add rest of ingredients. Mix ingredients and spoon into 12 greased muffin tins. Bake at 375 degrees for 20-25 minutes.
Glaze:
2 tbl. lemon juice
1 tbl.sugar
