Ice Cream Muffins

These muffins were a prize winner in Pillsbury's 17th Annual Bake off.
1-1/2 cups flour
1 tbl. baking powder
1 tsp. salt
1 egg
2 tbl.oil
2 cups very soft vanilla ice cream
Preheat oven to 425 degrees. Grease a muffin tin.
Measure flour, baking powder and salt into a mixing bowl. Add wet ingredients all at once. Mix only until all ingredients are moistened.
Bake for 20-25 minutes until golden brown.
