1 cup flour
1 cup cornmeal
1/4 cup sugar
4 tsp. baking powder
3/4 tsp. salt
2 eggs
1 cup milk
1/4 cup oil or melted shortening
400 degrees
whisk together flour, cornmeal, sugar, baking powder and salt. Add eggs, milk, and oil or melted shortening. Beat just until smooth. Do not overmix. Bake in greased muffin tin. 15-20 minutes.
