3-1/2 cups Biscuit mix
1/4 cup sugar
2 eggs
1-1/2 cups milk
Streusel topping:
1 jar (12 oz.) apricot preserves (1 cup)
Preheat oven to 375*. Grease a rectangular baking dish.
Mix baking mix, sugar, eggs and milk. Neat vigorously 30 second. Layer half each of the batter, streusel topping and apricot preserves in the dish; repeat. Bake until wooden pick inserted in the center comes out clean. 35-40 minutes.
