Apricot Bran Muffins ll

1-1/2 cups whole bran cereal
1 cup milk
1 egg
1/4 cup oil
1 cup flour
1/3 cup sugar
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. lemon peel
1 cup apricots, canned or fresh
In a small bowl combine the bran and milk. Let the mixture stand for 3 minutes. Stir in the egg and oil. Set aside.
In a separate bowl stir together the flour, sugar, baking soda, baking powder, salt, cinnamon, and lemon peel.
Add the bran mixture all at once, stirring just until moistened. Fold in the fruit.Fill greased muffin tins 2/3 full.
Bake at 400 degrees for 20-25 minutes.
