Amish Zucchini Muffins

2 cups whole wheat flour
1 tbl. baking powder
1 tsp. cinnamon
3/4 tsp. salt
2 eggs
3/4 cup milk
1/3 cup oil
1/4 cup honey
1 cup coarsely grated zucchini
1/4 cup chopped nuts (optional)
Preheat oven to 375 degrees. Grease muffin pan.
Stir together dry ingredients. In a small bowl, beat eggs, milk honey and oil. Add to dry ingredients. Stir just enough to moisten. Quickly stir in zucchini, and the nuts if desired.
Bake 20-25 minutes or until golden brown.
