Cake:
1/2 cup shortening
1-1/4 cups sugar
2 eggs
1 cup cooked, mashed pumpkin
2-1/4 cups flour
2-1/2 teaspoons baking powder
1-1/2 teaspoons baking soda
1 teaspoon salt
1/2 teaspoon ginger
1/2 teaspoon nutmeg
3/4 cup milk
Icing:
1 cup brown sugar
1/2 cup granulated sugar
2 tablespoons flour
1 cup milk
2 eggs
1 cup chopped walnuts
1 cup raisins
1 cup coconut
1 teaspoon vanilla
2 tablespoons butter
Cream together shortening, sugar and eggs. Add pumpkin and mix well. Stir together flour, baking powder, baking soda, salt, ginger, and nutmeg. Add dry ingredients to creamed ingredients, alternating with milk. Mix well. Pour into greased 9" x 13" baking dish. Bake at 350° for 35-40 minutes or until done. Let cool.
For the frosting, combine sugars, flour, milk and eggs in double boiler. Bring to a boil and cook for 20 minutes, stirring frequently. Fold in all remaining ingredients and cook 5 minutes longer. Spread frosting over cooled cake.
