Pennsylvania Dutch Salad Dresssiing

2 heaping tablespoons flour
2 tablespoons sugar
pinch or two of salt
1 egg
2 tablespoons vinegar
1/4 cup milk
2 cups water
8 or 9 slices bacon, cut in ΒΌ wide pieces
head of lettuce
3 or 4 hard-boiled eggs
mashed potatoes

Mix together flour, sugar, and salt. Add egg, vinegar, milk and water.
Fry bacon until crisp, do not drain. Place the flour mixture in the pan with the bacon and drippings; cook and stir until mixture thickens. Break lettuce up and pour dressing over it. Slice hard-boiled eggs on top.

Serve hot with mashed potatoes separately. This is a wilted lettuce salad that is eaten on top of the mashed potatoes.
