State Fair Pumpkin Doughnuts

1 box pumpkin quick bread mix
2 eggs
1/3 cup oil
3/4 cup sour cream
1 cup buttermilk
2 cups flour, more for rolling
1 cup sugar
1 tablespoon cinnamon

Preheat deep fryer to 375

Mix, bread mix, eggs, oil and sour cream together. in a large bowl. Using 1/2 cup of flour at a time, mix in flour, until rollable. In a medium bowl mix sugar and cinnamon together and set aside.

Spread additional flour on your work area and turn out dough onto it. Turn dough to coat both sides. Roll about 1/2 inch thick. Cut out doughnuts.

Place in fryer basket so they don't touch each other. Fry one minute. Turning. Place hot doughnuts in sugar and cinnamon mixture and coat well. Cool on a rack.

Makes 24 doughnuts
