4 eggs, beaten
2/3 cup sugar
1/3 cup milk
1/3 cup shortening, melted
3-1/2 cups flour
3 tsp. baking powder
3/4 tsp. salt
1 tsp. cinnamon
1/2 tsp. nutmeg
3 cups (about) shortening, for frying
Beat eggs and sugar until light. Add milk and cooled shortening. Add sifted dry ingredients. In a deep fryer, heat 3 cups shortening to 375 degrees. Drop small spoonfuls of dough, a few at a time, into hot fat until brown, turning once. Drain on paper towels. Be sure to fry at 375 degrees. If fat is too hot, donuts will be raw in the middle. If too cold, they absorb too much fat. If desired, sprinkle donuts with powdered sugar after they're drained.
