Baked Banana Donuts

1-1/3 cups sifted all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon nutmeg
1/3 cup sugar
6 tablespoons cold butter or margarine
1 egg
1/2 cup mashed ripe bananas (1 large or 2 medium bananas)
Sift together flour, baking powder, baking soda, salt and nutmeg; stir in sugar. Cut in butter until mixture resembles coarse meal.
Beat egg with mashed bananas; add to dry ingredients and mix well. Cover and chill about 2 hours. (Dough will be soft.)
Turn out onto lightly floured board, roll out 1/2 to 3/4-inch thick.
Cut with a floured 2-1/2-inch doughnut cutter, or trace with a knife, cutting out centers. Place 1/2-inch apart on greased baking sheet. Bake in 400 F. oven 10 minutes or until lightly browned. Cool slightly, frost while warm with Banana Glaze**.
Yield: 10 doughnuts and holes
**Banana Glaze: Mix 2 tablespoons mashed bananas and 1/3 cup sifted confectioners' sugar. Dip warm doughnuts into glaze, swirling to coat tops.
Note: The doughnuts are best when served warm. Roll out and cut doughnuts. Refrigerate on cookie sheet until about twenty minutes before serving time; bake as above.
