3 c. V-8 juice 4 lg. garlic cloves 1/4 tsp. Tabasco 4 c. grated zucchini 1 c. minced onion 1/2 c. chopped parsley 4 c. chicken broth 1/2 c. fresh lemon juice Salt to taste 2 c. chopped fresh tomatoes 1 1/2 green peppers, minced 2 tbsp. olive oil (opt.)
Place 1 cup of V-8 and the garlic in a blender or food processor and process until the garlic has been pureed. Transfer to a large bowl. Add the remaining ingredients. Season to taste. Refrigerate until well chilled, at least 4 hours.
