Ingredients (use vegan versions):
- 1 can great northern beans
- 1 bunch fresh spinach
- 1 tablespoon olive oil
- minced garlic (you choose amount)
Directions:
Serves 4.
Heat oil in a non-stick skillet til warm. Add as much garlic as you
and your loved ones can stand. Saute. Add one can of drained and rinsed
great northern beans. Heat thoroughly. Meanwhile, rinse and trim your
spinach and boil til done. Add boiled spinach to beans. Stir together
and heat for a few more minutes. Serve. That's it! Quick. Easy. Yummy.
What more could a busy vegetarian ask for?!
