Ingredients (use vegan versions):
- 1 large yam, cut up in small pieces
- 2 oz. vermouth
- 1 tablespoon vegan brown sugar
Directions:
Put yams in skillet with a little water. Cook on medium heat
covered for about 15 minutes, occasionally breaking up and mashing
the yams. Add vegan sugar and vermouth and cook 5-10 minutes more.
