Italian Herbed Collard Greens

Ingredients (use vegan versions):
- 3-4 tablespoon olive oil
- 2 large cloves garlic
- 1 large shallot
- FRESH oregano, basil, green onion, (I used my herbs cut from plant so I don't know measurements) about 2 sprigs each
- 1 teaspoon fresh grated ginger
- sesame seeds
- 1 teaspoon balsamic vinegar
- squeeze of fresh lemon
- crushed red pepper
- sea salt and pepper
- 1 bunch of collards
Directions:
Sautee all ingredients on medium-high
heat (EXCEPT collard's) in a heavy
bottom pan, when everything is beginning
to brown add your collards and
cover; reduce heat, when all greens
begin to reduce in size remove cover
and stir until everything is well mixed
and tender. Add more salt and lemon to
taste, if desired.
* When I cook, I generally don't measure
or look at the clock, just cook
everything to taste, and when you start
to smell your food, it means its almost
done!
