Garlicky Carrots

Ingredients (use vegan versions):
- 3 tablespoons non-hydrogenated vegan margarine
- 2 cloves garlic, crushed
- 4 large carrots, peeled and sliced crosswise 1/2 inch thick
- Salt to taste
- 1 teaspoon parsley flakes
Directions:
Melt margarine over medium heat. Add
garlic and sauté until aromatic (but
do not brown). Add carrots, sprinkle
with salt, cover and simmer for 15-20
minutes, stirring every once in a
while, until carrots are tender. Add
parsley and mix just before serving.
Serves: 2
