Delicata Squash Delight

Ingredients (use vegan versions):
- 1-2 delicata squash (I know that Whole Foods or Wild Oats carries them)
- whatever toppings you would use for a baked potato
Directions:
Split squash, scoop out seeds and microwave cut
side down in 1/4 of water for about 9 minutes.
Top with whatever you would use to top a baked
potato. My family likes Smart Balance Light, soy
parmesan and pasta sauce on them, but I think
anything that would go with a baked potato would
go with these. They have an almost sweet potato
flavor. Delicious.
