Eggplant & Veggie Pita

Ingredients (use vegan versions):
- vegan pita bread (This is best if you get the kind with pockets)
- Eggplant
- Bean Sprouts
- Zuccini
- Soy cheese (shredded)
- Butter (substitute if you want)
Directions:
Cut the eggplant into thin slices, so it cooks fast, and
also cut the other veggies. Put about a cup of veggies into
the skillet with some butter, so it doesn't stick plus adds
a little flavor, and fry them for a couple minutes or until
they look done then add some soy cheese. Then when they're
cooked, just put them in the vegan pita bread and eat. I think
that this would be good with more vegetables too, and
possibly a sauce
*Note that this recipe doesn't take a lot of vegetables to
serve one.
Serves: 2
