Butterscotch Yams

Ingredients (use vegan versions):
- 1 Large Baked Yam
- 1/4 cup yinnie brown rice syrup
- 1 tablespoon real vegan maple syrup
- 1/8 tablespoon ground ginger
- 1/8 tablespoon ground cinnamon
- 1/2 tablespoon rum flavoring
- 1/2 tablespoon vegan butter flavoring *see note
- toasted walnuts or pecans (opt.)
Directions:
Peel, slice yam into 1 inch rounds. Place in glass
casserole dish...In seperate bowl, placed other ingredients
and microwave 2-3 minutes until bubbly. Pour over yams and
return to micro 2 minutes more or until yams are hot.
Sprinkle nuts on top...the flavor of this is so rich that
you'll think your eating something sinful...
note: *butter flavoring can have butyric acid...not sure if it is
a dairy derivative....you may want to purchase the flavoring
at a hfs or omit and add additional rum...
Serves: 1 to 2
