Old-Fashioned Tomato Pudding

Ingredients (use vegan versions):
- 1 cup vegan brown sugar
- 1 cup tomato puree
- 1/4 cup water
- 2 cup vegan bread cubes
- 1/4 cup soy butter, melted (or less)
Directions:
Combine brown vegan sugar, tomato puree, and water. Cook 5
minutes. While tomato mixture is cooking, put vegan bread cubes
in a small sprayed casserole and pour butter over. Top with
piping hot tomato mixture. Bake at 325 for 50 minutes.
This can be doubled without doubling the butter.
This is not a low-fat recipe, but the amount of butter could
be reduced with good results. This is an old German recipe
that makes a delicious side dish. It puffs up during baking
but will fall once out of the heat. A great comfort dish on
a cold evening!
