German Ginger-ish Cookies

Ingredients (use vegan versions):
- 1 cup spectrum spread or shortening (both work equally well)
- 1 cup turbinado
- 1 tablespoon apple cider vinegar
- 1 tablespoon ginger
- 3/4 teaspoon baking soda
- 1/4 teaspoon salt
- 2 1/4 cup flour
Directions:
Preheat oven to 400. Mix spectrum or
shortening, turbinado, and vinegar.
Add dry ingredients. Roll dough thin (maybe
1/8 inch think?) and use fun cookie
cutters to make shapes.
Bake about 8 minutes (the cookies should be light
brown). Cool on the baking sheet for
five minutes before eating or storing
or whatever.
Serves: 24-30 large cookies
