Almond-Coconut Oatmeal Cookies

Ingredients (use vegan versions):
- 1 1/4 cup rolled oats
- 1/2 whole wheat flour
- 1/2 teaspoon salt
- 1/2 cup dried coconut shreds
- 1/3 cup raisins
- 2 tablespoon corn oil
- 3/4 cup mashed apple (peeled)
- 1/4 non-hydrogenated vegan margarine ()
- 1/2 teaspoon vanilla
- 1/3 cup toasted ground almonds
- 4 tablespoon vegan maple syrup
Directions:
Mix dry ingredients and set aside. Then blend
apple and maple syrup till it forms a nice
smooth mushy mass. Add butter. Add liquid to dry
mixture and mix to form a homogeneous whole.
Scoop spoonfuls onto lightly greased baking
sheet or non-stick flat pans (e.g. pizza pan) and
flatten to a 1/4" thickness. Bake in a preheated
oven at 400F for 15-20 minutes. Cool on rack.
