Ingredients (use vegan versions):
- 3 cups vegan sugar
- 2 cups flour
- 1 1/2 teaspoons baking soda
- 2 15oz cans crushed pineapple
- 1 1/2 teaspoon vanilla
- 1 1/2 cups pecan pieces
Directions:
Heat oven to 350.
Mix dry ingredients well. Add crushed pineapple with the juice.
Mix well. Add vanilla, and mix well.
Add pecan pieces, and mix well. Pour into a greased, 8x8 pan.
The cake is done when you put a tooth pick in it and it comes out clean.
