Gingerbread Cookies

Ingredients (use vegan versions):
- 4 tablespoons non-hydrogenated vegan margarine
- 1/2 cup raw vegan vegan sugar
- 1 egg equivalent (powdered replacement, mix according to packet instructions)
- 2 1/2 cups plain flour
- 1 teaspoon bicarbonate of soda
- 4 teaspoon ground ginger (I use around 6!!)
- 1 teaspoon ground cloves
- 2 teaspoon ground cinnamon
- 2 teaspoon ground nutmeg
- 3 tablespoons golden syrup
Directions:
Cream margarine and raw sugar, add egg replacement, mix.
Add flour, soda and spices, then golden syrup. Mix well
( if you find that the mixture is
a little dry, add 1/2 a tablespoon more golden syrup).
Roll mixture into teaspoon sized balls (or bigger if you like!),
flatten slightly and
place on cookie tray.
Bake for 10 minutes in a moderate oven.
Yummy hot or cold!
