Daarte's Kitchen Sink Cookies

Ingredients (use vegan versions):
- 3 cups rolled oats
- 1 cup steel-cut oats (scotch oatmeal)
- 1/2 cup peanut butter
- 2 REALLY ripe bananas
- 1 cup carob chips
- 1/2 cup (or more) raisins
- Ener-G Egg Replacer (equivalent to 2 eggs)
- 1 cup your favorite flavor nuts (we use almonds or pecans)
Directions:
1) blend bananas and peanut butter until creamy. 2) add egg
replacer and blend well. 3) add both kinds of oats, and
stir until blended. 4) add raisins, nuts, and carob chips.
5) bake in a 350 degree oven for 10-12 minutes, or until
cookies are golden brown.
*If your cookie dough is a little thin, add rice flour
(usually 1/2 to 1 cup). This happens when the bananas are
huge, or super-ripe.
Serves: 3 dozen
Preparation time: 30 minutes (or less!)
