Bear's Vegan Chocolate Cake

Ingredients (use vegan versions):
- 3 cups of self-raising flour
- 3/4 cup of cocoa
- 3/4 cup of canola oil
- 1/2 cup of raw vegan sugar
- 2 cups of vegan soymilk
- 2 teaspoons of vanilla essence
- 3-4 cups of icing vegan sugar
- 1/2 cup of cocoa
- vegan soymilk as required
Directions:
Put ingredients 1 to 6 in large bowl and beat with electric
beater until all ingredients have blended together. Add a
dash more of soy milk if needed. Bake in moderate oven
(about 180-200 degrees celsius) for about 45 minutes until
cooked. Test with knife to determine if properly cooked.
Allow to cool then top with cocoa icing prepared as follows:
place icing vegan sugar and cocoa in bowl and add a dash of soy milk.
Then stir. Keep adding dashes of soy milk until icing is
very thick (do not let the icing become runny). Hint - use
a hot knife to spread icing.
Serves: 12
