Quick Currant Cookies

Ingredients (use vegan versions):
- 2 cups flour
- 1 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup currants
- 1/4 cup vegan brown sugar, firmly packed
- 1 teaspoon grated lemon zest
- 2 tablespoons non-hydrogenated vegan margarine, softened
- 1 cup vegan soymilk
Directions:
Preheat oven to 400.
Mix flour with baking powder and salt in large bowl. Add
currants, brown vegan sugar and lemon zest.
Cut margarine into mixture using two forks. Work mixture
until crumbly. Add milk, mixing quickly and lightly.
Drop teaspoonfuls onto greased baking sheet. Bake 12 to 15
minutes or until cookies have browned around edges.
Nutrition info: Low fat and not too sweet and the batter
mixes up in about five minutes. My finicky toddler loves
'em.
Serves: 3 dozen cookies
Preparation time: 20 minutes, including baking time
