Ingredients (use vegan versions):
- 1 small onion, chopped
- 2-3 cloves garlic, mashed
- 2 14-oz. cans kidney beans, drained and rinsed
- 2 14-oz. cans chopped tomatoes
- 1 8-oz. can corn, drained and rinsed
- 1 4-oz. can diced green chilis
- 1 tablespoon chili powder
- 1 tablespoon cumin
Directions:
In a heavy kettle, saute onion and garlic in small amount of oil
or water till soft. Dump in (hence the name) canned goods and
seasonings. Heat through.
This recipe takes well to long simmering, if you have the time, and
tastes even better the second day. Wonderful served over hot rice.
