Fresh Veggie Basil Soup

Ingredients (use vegan versions):
- 1 big onion
- 2 stalks celery
- 3 carrots
- 3 big potatoes
- 2 large tomatoes
- 4 cups veggie stock-can use 4 cups water with a couple Vegex cubes
- 1 teaspoon dried bazil
- 1/2 head cauliflower
- 1 cup peas
Directions:
In large pot, put veggie stock. Add onions, celery, and
carrots. Cook about 10 minutes. Add potatoes, tomatoes and
basil. Cover, bring to bowl. Simmer about 15 minutes. Add
cauliflower and peas. Simmer a little longer til cauliflower
is done.
