Mum's Pumpkin Soup

Ingredients (use vegan versions):
- 1 small pumkin
- 3 large potatoes
- 2 carrots
- 1 celery stalk
- vegetable stock cube
- salt & pepper to taste
Directions:
Cut up all the vegetables into small cubes, and put in a
large soup pot. Cover with water, and just pop it all on to
boil. When boiling, crumble in the veggie stock cube and salt.
Turn down to simmer, and just leave until all the vegetables
are soft. (May have to add a little water every now and
then). Blend until you have a thick soup, sprinkle over some
pepper and enjoy with fresh vegan bread.
(Quantities may vary, as long as the amount of pumpkin about
equals the total of other veggies).
Serves: 4
Preparation time: approx 2 hrs
