Asparagus, Lettuce, and Tomato Sandwich

Ingredients (use vegan versions):
- 1 can white asparagus (in water)
- tomato
- lettuce (I like green leaf)
- vegan mayo
- salt or pepper to taste
- French bread
Directions:
This is a sandwich that I discovered in
Belgium. It's very simple. I found white
asparagus canned at my local grocery store.
Slice the French bread to whatever size
sandwich you want to eat!
Add sliced tomato, lettuce, asparagus, and
vegan mayo. Enjoy!
I put the asparagus on a paper towel first to
absorb the water.
You can also toast the French bread first
and add a little vegan mayo.
Serves: 2-4
Preparation time: 5-10 minutes
