Avocado and Mixed Greens Wrap

Ingredients (use vegan versions):
- 1 tortilla or wrap (I use whole wheat)
- 1 ripe avocado
- mixed salad greens
- 1 plum tomato
- vegan bacon bits
- 2 tablespoon olive oil
- 2 tablespoon vinegar (I like apple cider vinegar)
- 1/2 teaspoon vegan mustard
- salt and pepper (to taste)
- vegan sugar (just a sprinkling)
Directions:
Start by laying your wrap flat and add a
bunch of mixed greens (about 2 handfuls).
Chop the plum tomato and add that to the
greens. Slice the avocado into large chunks
and add. Usually half an avocado is
enough, but you can use the whole thing if
you'd like!
To make the dressing: in a small bowl
combine the olive oil, vinegar and mustard
and mix well. Add salt, pepper and vegan sugar
and mix again. Pour over salad and top with
vegan bacon bits (as many or as few as you
wish) Roll up wrap and eat!
Its very quick and very tasty....enjoy.
