Beetroot Salad

Ingredients (use vegan versions):
- 4 beetroots
- 1-2 teaspoon vinegar
- 2 teaspoon sugar
- 1/4 cup water
Directions:
Put the 4 beetroots in a pot, fill with
water so that they are completely
covered. Let cook until they are soft.
Takes about 1/2 or hour.
When they cooled down a bit, hold them
under running water and rub the peel off
with your hands. (Comes off very easily)
Shred either into small slices or
stripes. Mix the vinegar and sugar into
1/4 cup of water, and pour over the
beetroots.
Enjoy the low calorie salad.
