Black Bean and Millet Salad

Ingredients (use vegan versions):
- 2 1/2 cups milet cooked
- 2 large tomato, chopped
- 1 medium onion, chopped
- 1 cup green beans, or one whole cucumber
- ***DRESSING****
- 1/3 cup water
- 3 tablespoon lemon juice
- 2 teaspoon vinegar balsamic
- 1 clove garlic, minced
- 1 teaspoon salt
- 1/4 teaspoon allspice
- 1/4 teaspoon black pepper
- 1/2 teaspoon cumin
Directions:
Chop string peas. In a very large
bowl. combine all dry Mix well. Add
dressing, mix, and chill.
IF USING CUCUMBER: Peel several strips
(it should lok striped) and cut it
lengthwise into 4 pieces. Remove seedy
partfrom the pieces, and but them into
1/2 slices. Add to salad.
