Matt and Paul's Potato Salad

Ingredients (use vegan versions):
- 1 lb. white creamer potatoes
- 1 white onion
- 3 cloves garlic (or to taste)
- 3 tablespoon vegan mayonnaise
- 1 tablespoon your favorite vegan mustard
- 1 cup extra firm tofu
- 1/4 fresh lime juice
- 1/2 cup fresh dill (or to taste)
- salt and pepper to taste
Directions:
Boil potatoes until soft.
In a mixing bowl, combine the onion (diced), garlic
(crushed), tofu (diced), mayonnaise, mustard, lime juice,
dill, salt and pepper.
Halve the individual cooked potatoes and add to the mixture
warm. Stir with love and enjoy! Can be served warm or cold.
Serves: 2
